A Little Personal History:

For an appetizer, these bacon rapped shrimp are to die for. When asked to bring an appetizer to a party, this is one of my go to dishes. Enjoy!

Description:

Categories: Appetizer
Servings: 24 – 30 appetizers
Time: – Preparation:   20 minutes
– Cooking:         10 minutes
Equipment: Cutting board and knife/scissors, 2 plates, toothpicks, broiling pan, side dishes for sauce
Difficulty: Easy

Ingredients:

  • 15 slices bacon
  • 4 Tbs Cajun Blast Seasoning, more as needed
  • 1 pounds medium shrimp (24 to 30), tail on and peeled
  • Canola oil or oil spray

Procedure:

  1. Cut each slice of bacon in half with scissors. Set aside on plate.
  2. Measure Cajun seasoning and set aside on small bowl.
  3. If fresh shrimp, de-vein and wash shrimp. If frozen, uncooked shrimp, thaw and rinse shrimp under cold water.
  4. Lightly dredge shrimp in season bowl on all sides. Shake of excess, set aside on plate.
  5. Lightly spray or grease broiling pan.
  6. Wrap bacon slice around each shrimp. Insert a toothpick through the wrapped bacon and shrimp to hold in place.
  7. Place each wrapped shrimp, evenly spaced, on greased broiling pan.
  8. Pre-heat oven on Broil.
  9. Place pan on top oven rack, about 3 inches below the top heating element.
  10. Broil for 5 minutes. Remove from oven and turn shrimp over. Return to oven and continue broiling for an additional 5 minutes or until bacon is crisp and shrimp is bright orange and/or firm to the touch.
  11. During final 5 minutes of broiling, watch carefully to prevent shrimp from burning or becoming over done.
  12. Serve warm or at room temperature.
  13. Serve with side dipping sauce(s) (e.g. Cocktail Sauce, Spicy Dipping Sauce, Sweet and Sour Sauce, Tartar Sauce, Honey Mustard Sauce, etc)

Advanced Preparation:

  • Steps 1 – 6 can be done in advance, covered and refrigerated day of event.

Tips, Notes, and Variations:

  • If you don’t want that little extra Cajun “bite”, omit the Cajun seasoning and sprinkle shrimp with a little salt and pepper to taste.
  • These appetizers can also be grilled. Just set grill to high and cook till bacon is crispy and shrimp is done.
