A Little Personal History:

I love all types of curry and ground beef over rice with indian condiments is one of my favorites.

Ingredients (Curry):

  • 2 pounds. ground beef
  • 4 ripe tomatoes or 1 (16 oz.) can tomatoes (blanched & diced)
  • 1/2 cup green peas
  • 4 teaspoon curry powder
  • 2 teaspoon salt
  • 2 cloves garlic, minced
  • 1 ½ cups chopped onion
  • 4 cups yellow rice
  • 3 Tbs butter

Procedure (Curry):

  1. Break up ground beef. Set aside in medium bowl.
  2. Blanch, skin & dice tomatoes. Set aside in medium bowl.
  3. Add curry, salt, pepper to small bowl and set aside.
  4. Chop onion and mince garlic. Set aside in small bowl.
  5. Prepare rice per instructions.
  6. In large skillet, heat butter over medium heat, don’t allow to brown.
  7. Add garlic and onion and saute with wooden spoon until onions are soft.
  8. Add ground beef and brown.
  9. Add curry seasoning, peas and tomatoes. Blend & heat thoroughly.
  10. Serve over cooked rice (if necessary, zap in microwave for 2 minutes to re-heat).

Ingredients (Condiments):

  • 2 sliced bananas
  • 1 cup raisins
  • 1 cup chopped nuts
  • 1 ½ cup coconut, shredded
  • 1 cup mango chutney, if available

Procedure (Condiments):

  1. Fill separate serving bowls with condiments and place on table with small serving spoons to allow everyone to put what they want on their curry.

Advanced Preparation:

  • Steps 1 – 5 can be done in advance and refrigerated till needed.
  • Entire dish can be prepared in advance, refrigerated or frozen, and re-heated.
