Beef Curry with Condiments

I love all types of curry and ground beef over rice with indian condiments is one of my favorites.

Ingredients (Curry):
- 2 pounds. ground beef
- 4 ripe tomatoes or 1 (16 oz.) can tomatoes (blanched & diced)
- 1/2 cup green peas
- 4 teaspoon curry powder
- 2 teaspoon salt
- 2 cloves garlic, minced
- 1 ½ cups chopped onion
- 4 cups yellow rice
- 3 Tbs butter
Procedure (Curry):
- Break up ground beef. Set aside in medium bowl.
- Blanch, skin & dice tomatoes. Set aside in medium bowl.
- Add curry, salt, pepper to small bowl and set aside.
- Chop onion and mince garlic. Set aside in small bowl.
- Prepare rice per instructions.
- In large skillet, heat butter over medium heat, don’t allow to brown.
- Add garlic and onion and saute with wooden spoon until onions are soft.
- Add ground beef and brown.
- Add curry seasoning, peas and tomatoes. Blend & heat thoroughly.
- Serve over cooked rice (if necessary, zap in microwave for 2 minutes to re-heat).
Ingredients (Condiments):
- 2 sliced bananas
- 1 cup raisins
- 1 cup chopped nuts
- 1 ½ cup coconut, shredded
- 1 cup mango chutney, if available
Procedure (Condiments):
- Fill separate serving bowls with condiments and place on table with small serving spoons to allow everyone to put what they want on their curry.
Advanced Preparation:
- Steps 1 – 5 can be done in advance and refrigerated till needed.
- Entire dish can be prepared in advance, refrigerated or frozen, and re-heated.
