Cajun BBQ Sauce

A Little Personal History:
I wanted to do a Cajun BBQ for the family. While I”ve got a great “Kansas City” BBQ Sauce, for this occasion, I needed a Cajun twist. Once again, Emeril came to the rescue. Here”s my version, derived from his.

Ingredients:
- 1 Tbs garlic; minced
- 1 Tbs jalapeño peppers; minced
- 4 cups Lars”s Ketchup
- 1 cup yellow onions; finely chopped
- ½ cup molasses
- ½ cup dry red wine
- 2 Tbs lemon juice, fresh squeezed
- 2 Tbs Lars”s Spicy Brown Mustard
- 2 Tbs dark brown sugar
- 1 teaspoon Lars”s Red Pepper Sauce
- 1 teaspoon salt
- ½ teaspoon cayenne
- 1 dash Lars”s Scorching Hot Sauce
Procedure:
- Mince garlic & jalapeño and add to large mixing bowl.
- Measure remaining ingredients, combine in mixing bowl.
- Whisk together till well mixed.
- Sauce can be used immediately or refrigerated for up to 3 days
Advanced Preparation:
- If preparing in advance, tightly sealed in container and refrigerated.
Tips, Notes, and Variations:
- This sauce was made specially for grilling baby back ribs and goes well with just about any grilled meat you can think of. For that matter, it goes well with just about anything that goes with BBQ sauce.
