Cranberry Relish

A Little Personal History:
I love cranberries and here’s a relish that works brilliantly with any poultry dish.

Ingredients:
- 2 pounds fresh cranberries
- 1 cup sugar
- ¼ cup Grand Marnier liqueur
- 1 orange, zested and juiced
- 1 tablespoon cinnamon
- ¼ cup chopped walnuts (optional)
Procedure:
- Place all the ingredients in the food processor, pulse several times to break down the cranberries and incorporate the ingredients. It should still be a bit chunky.
- Allow the cranberry relish to sit at room temperature for at least 1 hour, so the flavors can marry.
Advanced Preparation:
- Relish can be prepared a day in advance or frozen till ready for serving.
Tips, Notes, and Variations
- If you prefer a sauce, for Step 1 continue pulsating food processor to desired consistency. If necessary, slowly add a water.
