A Little Personal History:

I love cranberries and here’s a relish that works brilliantly with any poultry dish.

Description:

Time: – Preparation: 10 minutes – Marinade: 1 Hour
Equipment: measuring cup & spoons, zester or sharp knife, hand juicer, food processor
Difficulty: Easy

Ingredients:

  • 2 pounds fresh cranberries
  • 1 cup sugar
  • ¼ cup Grand Marnier liqueur
  • 1 orange, zested and juiced
  • 1 tablespoon cinnamon
  • ¼ cup chopped walnuts (optional)

Procedure:

  1. Place all the ingredients in the food processor, pulse several times to break down the cranberries and incorporate the ingredients. It should still be a bit chunky.
  2. Allow the cranberry relish to sit at room temperature for at least 1 hour, so the flavors can marry.

Advanced Preparation:

  • Relish can be prepared a day in advance or frozen till ready for serving.

Tips, Notes, and Variations

  • If you prefer a sauce, for Step 1 continue pulsating food processor to desired consistency. If necessary, slowly add a water.
