A Little Personal History:

For all their many uses, I hate getting a great deal on large bags of fresh lemons or limes only to have more than I like spoil before all have been used. And when juicing, I always want to squeeze every drop.  After much trial and error, here are the best ways I’ve found to get the most out of your lemons and limes.

Procedure:

Best way to Preserve Lemons and Limes

After extensive testing, I’ve found Lemons and Limes refrigerated in sealed plastic bags last up to 4 weeks or 4 times longer compared to storing at room temperature. I suppose it has something to do with colder temperatures slowing down the cellular break down of the fruit.

Squeezing the most out of your Lemons and Limes

  1. Take fruit out of the fridge and bring to room temperature. Note: You can also zap in the microwave for 10 seconds to warm quickly though I prefer bringing to room temperature naturally 🙂
  2. Prior to cutting in half for squeezing, using the palm of your hand, pressure roll fruit on countertop or cutting board to soften and break down pulp juices.  
  3. Cut lemons/limes “length-wise” NOT “cross-wise”. This is critical to extracting as much juice as possible. 
  4. Use a citrus juicer for the 1st round of juice extraction. Extract as much juice as possible into a bowl.
  5. Next, using a fork, “twist, scrape and press” out last of juice into bowl.
  6. If needed, strain juice to separate seeds and pulp.

Advanced Preparation:

Fresh squeezed is always best yet if you want to prepare ahead, you can save squeezed juice in a sealed glass or mason jar and refrigerate till ready to use.

Tips, Notes, and Variations:

If fruit is approaching it’s “throw away” date or you want to squeeze juice now to save for future use, follow above steps and then pour juice into ice cube trays and freeze. Transfer frozen juice cubes to baggies till needed.
