Grilled Cajun Parmesan Corn on the Cob

A Little Personal History:
You can cook up corn in a variety of ways. My favorite is grilling seasoned corn on cobb in aluminum foil. Here’s how I do it.

Ingredients:

- 8 ears of corn with husks

- 1 Tbs Cajun Blast Seasoning
- 1 cup butter, melted
- 1/2 cup freshly grated or store bought Parmesan cheese
- oil (vegetable, olive, canola, etc.) for grill
Procedure:
- In large skillet, over medium heat, melt butter. Add Cajun seasoning and saute for 1 minute. Remove from heat and set aside.
- After Cajun butter has cooled, whisk in Parmesan cheese. Set aside.
- Peel back corn husks and remove silk (see below for tip to easily remove). Brush seasoned butter on each piece of corn. Close husks around corn.
- Wrap each ear of corn tightly in aluminum foil.
- Preheat outdoor grill on high heat and lightly oil or spray grates.
- Place wrapped ears of corn on the prepared grill. Cook 20-30 minutes, turning occasionally with tongs, until corn is tender.
Advanced Preparation:
- Steps 1 – 4 can be done in advance and refrigerated till ready to grill.
Tips, Notes, and Variations:
- Instead of butter, substitute olive or Canola oil for a “healthier” seasoning oil.
- To more easily remove the silk off ears of corn, dampen a paper or kitchen towel and run it across the ear. The towel picks up the silk, and the corn is ready for the grill.
- If you’d rather just have the Cajun without the cheese, don’t do step 2.
