A Little Personal History:

Grilled Kebabs are a great go to dish whether for BBQ, dinner with friends and family or just for one. This oriental version with wasabi and ginger  is one of my favorites.,

Equipment: BBQ grill, cutting board and knifes, measuring cups and spoons, large mixing bowl, small bowl, 8 long metal skewers, basting brush
Difficulty: Easy

Ingredients:

  • 4 – 16 oz. sirloin steak (cubed)
  • 24 medium/large shiitake mushrooms, de-stemmed
  • 3 large bell peppers (1 red, 1 green, 1 yellow), seeded and cut into squares
  • ¼ cup dry sherry
  • ½ cup soy sauce
  • 2 Tbs toasted sesame oil
  • 3 Tbs rice wine vinegar
  • 3 Tbs peeled and finely chopped fresh ginger
  • ½ teaspoon wasabi paste
  • Salt and pepper to taste

Procedure:

  1. On cutting board, cut meat into 2” cubes. Attempt to end up with 16 meat cubes. Set aside.
  2. Rinse and remove mushroom stems. Set aside.
  3. Seed and cut bell peppers into 2” squares. Set aside.
  4. In a large bowl, combine the sherry, soy, sesame oil, rice vinegar, Wasabi paste and ginger, blend thoroughly.
  5. In small bowl, reserve ⅓ of the marinade for basting during cooking later.
  6. Add the sirloin cubes to the remaining marinade, cover bowl and allow to marinate in refrigerator for 2 hours.
  7. Drain the beef of excess marinade. Thread the sirloin cubes unto the skewers, alternating with mushroom, and pepper squares (use 4 pieces of beef per skewer) .
  8. Pre-heat an outdoor grill to medium heat by building a charcoal fire to one side or setting the gas burners to medium, pre-heating for 15-20 minutes.
  9. Season the kebabs with salt and pepper. Place the kebabs on the hot grill, be aware of flame ups do to the dripping marinade. Carefully baste the kebabs with the reserved marinade.
  10. Cook for 2-3 minutes per side, turning until all 4 sides of the beef cubes are cooked.
  11. Remove and serve.
