A Little Personal History:

I love dishes I can make, refrigerate and re-heat for breakfast, brunch, or a late night snack. This tortilla pie fits the bill.

Equipment: Measuring cups and spoons, cutting board, knifes and scissors, grater, 1 small bowl, 1 medium bowl, 1 large mixing bowl, whisk, plastic spatula,  6” round casserole dish
Difficulty: Easy

Ingredients:

  • 4 strips bacon
  • 24 tortilla chips
  • ½ cup ham, dice
  • ½ cup cheddar cheese, grated
  • 6 large eggs
  • 1 cup milk
  • ⅛ teaspoon salt
  • Dash of pepper
  • cooking spray or butter

Procedure:

  1. With scissors or sharp knife, cut bacon into small pieces and add to small skillet over medium heat. Sauté until brown. Transfer to paper towel and pat dry. Set aside in small bowl.
  2. While bacon cooks, place tortilla chips in medium bowl and crumble into small bits.
  3. Dice ham, grate cheese and transfer to medium bowl. Set aside.
  4. Break eggs into a large mixing bowl, whisk together. Add milk, salt, pepper and whisk until well blended.
  5. With spatula, fold ham, cheese and chips into egg/milk mixture and blend together.
  6. Spray casserole dish with cooking spray or grease with butter
  7. Pour mixture into casserole dish, smooth with spatula and sprinkle bacon pieces on top.
  8. Preheat oven to 350°F.
  9. Bake 20 minutes or until a knife comes out clean when casserole is tested.
  10. Cut in wedges and serve.

Advanced Preparation:

  • Steps 1 – 3 can be done in advance, covered and refrigerated till ready to use.
  • Steps 1 – 7 can be done in advance, cover casserole dish and refrigerate or freeze till ready to bake. If frozen, return to refrigerator temperature before baking.

Tips, Notes, and Variations:

  • Left-overs can be refrigerated and re-heated in either a toaster oven or microwave.
  • For a more southwestern twist, try adding red onions, bell peppers, chili peppers, etc. Have fun.
