Meat Sauce

A Little Personal History:
Here’s the tomato based meat sauce I came up with for pasta dishes. What’s fun is it’s a great example on how base sauces can be used as a foundation to build on top of (in this case, my tomato sauce > tomato based meat sauce > other stuff you want to add for a great dish – meat based pasta dishes, sloppy joes, chili, etc.)

Equipment: | Cutting board and knife, garlic press, measuring bowls and spoons, large skillet, wooden spoon, large container |

Ingredients:
- 1 large onion, chopped
- 1 red pepper, chopped
- 1 large garlic clove, pressed
- 1 Tbs olive oil
- 2 pounds ground Italian sausage and/or ground beef
- 1 teaspoon Cajun Blast Seasoning
- 2 quarts Classic or Hybrid Tomato Sauce
Procedure:
- Chop onion & pepper. Press garlic clove. Set aside in bowl
- In large skillet, over medium heat, add olive oil, saute onion, pepper, and garlic until onion is tender.
- Add meat(s) and saute till meat is browned.
- Add Cajun Blast and tomato sauce and blend together with wooden spoon for 10 minutes.
- Reduce heat to very low, cover skillet and simmer for 45 minutes, stirring occasionally.
- Uncover; simmer 15 minutes or until sauce reaches desired consistency.
- If you won’t be using immediately, transfer to meal sized containers and freeze till needed.
Advanced Preparation:
- Everything can be prepared in advance and frozen till needed.
Tips, Notes, and Variations:
- For a meat sauce with additional vegetables, chop or slice and add 1 cup of veggies, to Step 1. For example, if you want to add mushrooms, slice 1 cup worth and add. If two veggies are to be added, chopped/sliced ½ cup of each.
