BELT Sandwich

A Little Personal History:
For breakfast, lunch or late night snack that’s quick to make, especially if just for me, I always seemed to have a loaf of french bread, eggs, bacon, lettuce and tomatoes handy and available. For me, it’s become a natural sandwich to whip up if hungry before going to bed.

Ingredients
- 2 bacon strips B
- 1 egg E
- 1 Lettuce leaf L
- 2 slices tomato T
- 2 slices french bread loaf
- mayonnaise to taste
Toppings (Optional):
- 1 teaspoon green onions chopped
- 1 tablespoon Chili Con Queso
- 1-3 dashes Scorching Hot Sauce

Instructions
- In skillet fry bacon till done. Allow to cool, cut in halves and set aside on small dish. Set aside skillet with bacon fat reserved.
- Use one lettuce leaf or enough chopped lettuce for one sandwich. Set aside on small dish.
- Cut thin 2 slices of tomato. Set aside on small dish.
- Cut two thick slices of french bread loaf but not so thick they won’t fit in toaster Alternatively toast them in oven.
- In skillet with bacon fat heat over medium heat till hot. Break egg in skillet and, depending on your preferences, fry sunny-side up, over easy, yolks solid, etc. Personally, I like white set and yolk runny.
- While frying egg, toast slices of french bread.
- Generously spread mayo on both slices of toasted bread.
- On one toasted slice of bread, add lettuce, bacon, fried egg, tomato slices and optionally top with cheese sauce, chopped green onions and/or a couple dashes of hot sauce.
- Top with other toasted bread slice and cut with cleaver diagonally.
- Serve immediately.

Advanced Preparation:
- Steps 1-4 can be done in advance and refrigerated till ready to fry the egg.
Tips, Notes, and Variations:
- For fried egg you can substitute with huevos ranchero, poached or hard boiled sliced with egg slicer. Personally I prefer my BELT with the egg & bacon warm and yolk runny but to each there own.
