A Little Personal History:
Every since living in New Orleans many years ago, spicy Cajun seasoning has been one of my favorite go to spice mixes when I want to add a little heat to the dish. It’s a staple for every dish with “cajun” in the name and this is my favorite blend of spices.

Ingredients
- 1/4 cup coarse salt
- 1 tablespoon cumin seed
- 1 tablespoon ground white pepper corns
- 1 tablespoon ground black pepper corn.
- 2 tablespoon paprika
- 2 tablespoon garlic powder
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
- 1 tablespoon dried cilantro
- ½ tablespoon dried oregano
- ½ tablespoon dried thyme

Instructions
- With a mortar and pestel or grinder, grind salt, cumin seed, white & black peppercorns
- In a bowl, combine and mix all ingredients. Store in an airtight container in a cool dry place for up to 6 months
