A Little Personal History:

Chicken salad is one of those comfort foods I never seem to tire of.  I’ll make up a batch on Sunday and have it chilling in the fridge for sandwiches and salads the rest of the week.
Here’s my favorite recipe that you can use as is or tweak with you favorite herbs and spices.

Ingredients
  • 1 pound chicken breasts fully cooked
  • 1/2 cup celery diced
  • 1/2 cup onion diced
  • 3/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon ranch dressing
  • 1 tablespoon milk
  • 1 teaspoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/8 oz salt and pepper to taste
  • 1 cup seedless grapes halved
  • 1/4 cup raisins or craisins
  • 1/4 cup walnuts chopped

Instructions
  1. Bake or skillet cook chicken till done.
  2. On a cutting board dice chicken breasts into small cubes. Transfer to medium mixing bowl.
  3. Chop and dice celery, onions, nuts and add with raisins to mixing bowl.
  4. Add all remaining ingredients to mixing bowl, fold and blend together thoroughly with server fork and spoon.
  5. Refrigerate for 1 hour prior to serving.
  6. Seve over fancy greens or pre-packaged salad mix of your choice

Advanced Preparation:

  • Everything can be prepared in advance, sealed in a container and refrigerated till ready to serve.

Tips, Notes, and Variations:

  • Serve salad over layered greens with warm, fresh bread. This way you can eat as a salad or make into a sandwich.
