  • 2 tablespoons all-purpose flour
  • Salt & Pepper to taste
  • Pinch nutmeg
  • 1 cup milk
  • 1 cup green peas fresh or frozen
  • 3 tablespoons Parmesan cheese grated

  • 2 tablespoon. butter

Instructions
  1. Peel onions and cut a small cross at root end of each. Alternately, place onions in boiling water for 3 minutes. Rinse to cold water till you can handle. Cut root and squeeze other end to remove skins. If the latter is used, reduce final cooking time by 3 minutes.
  2. Place onions in a 3 quart saucepan, cover with water and cook until tender. Approximately 10 minutes. Drain well.
  3. In medium saucepan melt butter.
  4. Stir in flour and cook for 1 minute over low heat. Season with salt, pepper and nutmeg to taste.
  5. Gradually stir in milk and cook over medium heat until thickened.
  6. Add onions and peas and simmer 5 minutes.
  7. Serve with grated Parmesan cheese.

Advanced Preparation:

  • Steps 1-2 can be done a day in advance and refrigerated.

Tips, Notes, and Variations:

  • If you’re using frozen pearl onions, substitute Steps 1 – 2 with package instructions.
