Creamed Peas & Pearl Onions

Instructions
- Peel onions and cut a small cross at root end of each. Alternately, place onions in boiling water for 3 minutes. Rinse to cold water till you can handle. Cut root and squeeze other end to remove skins. If the latter is used, reduce final cooking time by 3 minutes.
- Place onions in a 3 quart saucepan, cover with water and cook until tender. Approximately 10 minutes. Drain well.
- In medium saucepan melt butter.
- Stir in flour and cook for 1 minute over low heat. Season with salt, pepper and nutmeg to taste.
- Gradually stir in milk and cook over medium heat until thickened.
- Add onions and peas and simmer 5 minutes.
- Serve with grated Parmesan cheese.

- Steps 1-2 can be done a day in advance and refrigerated.
