A Little Personal History:

One Thanksgiving we realized we didn”t have enough side dishes. We did have extra sweet potatoes and apples so after a little thought, here”s what a came up with and it turned out really well!

Time: – Preparation: 1 hour – Cooking: 1 hour
Equipment: medium pot, saute pan, basting brush, potato peeler, knife, 13×9 inch baking dish
Difficulty: Easy

Ingredients:

  • 3 large sweet potatoes
  • 3 Granny Smith apples
  • 3/4 cup firmly packed brown sugar
  • 1 tablespoon grated orange rind
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup finely crushed gingersnap cookies (about 10 cookies)
  • 1/3 cup butter — cut up

Procedure:

  1. In a medium pot, bring sweet potatoes  to boiling water and cover 45 minutes. Drain and cool slightly.
  2. Peel sweet potatoes, and cut into 1/4-inch-thick-slices.
  3. Combine brown sugar, orange rinds, salt, cinnamon & ginger snaps. Seal and set aside
  4. Melt butter in pan over medium low heat.
  5. Peel, core, and thinly slice apples into rings.
  6. Arrange potato slices and apple slices in a lightly brush with melted butter 13-x9-inch baking dish. 
  7. Sprinkle with brown sugar mixture, and brush evenly with remainder of melted butter.
  8. Bake at 350F for 1 hour.

Advanced Preparation:

  • Steps 1 – 3 can be night before, sealed and refrigerated.
