Roasted Sweet Potatoes and Apples

A Little Personal History:
One Thanksgiving we realized we didn”t have enough side dishes. We did have extra sweet potatoes and apples so after a little thought, here”s what a came up with and it turned out really well!

Ingredients:
- 3 large sweet potatoes
- 3 Granny Smith apples
- 3/4 cup firmly packed brown sugar
- 1 tablespoon grated orange rind
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/3 cup finely crushed gingersnap cookies (about 10 cookies)
- 1/3 cup butter — cut up
Procedure:
- In a medium pot, bring sweet potatoes to boiling water and cover 45 minutes. Drain and cool slightly.
- Peel sweet potatoes, and cut into 1/4-inch-thick-slices.
- Combine brown sugar, orange rinds, salt, cinnamon & ginger snaps. Seal and set aside
- Melt butter in pan over medium low heat.
- Peel, core, and thinly slice apples into rings.
- Arrange potato slices and apple slices in a lightly brush with melted butter 13-x9-inch baking dish.
- Sprinkle with brown sugar mixture, and brush evenly with remainder of melted butter.
- Bake at 350F for 1 hour.
Advanced Preparation:
- Steps 1 – 3 can be night before, sealed and refrigerated.
