Description:

Use this on grilled or rotisserie style chickens. This recipe makes enough rub to coat 2 whole chickens.

Time: – Preparation: 10 minutes
– Cooking: 1 hour
– Refrigeration: Optional, 4 hours/overnight
Equipment: medium mixing bowl, whisk, rotisserie grill
Difficulty: Easy

Ingredients:

  • 2 Whole Young Chickens (3-4 pound each)
  • 2 yellow onions (quartered)

Rotisserie Chicken Rub

  • 2 Tbl kosher salt
  • 1 Tbl brown sugar
  • 2 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon white pepper
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Procedure:

  1. Rinse chickens and pat dry.
  2. Whisk all rub ingredients in mixing bowl.
  3. Rub each chicken inside and out with rub mixture.
  4. Place a quartered onion inside each chicken.
  5. Wrap each chicken with plastic & refrigerate for 4 hours or overnight.
  6. Skewer and cook chicken(s) on rotisserie grill for 1 hour.

  7. Let stand 10 minutes before carving.
