Use this on grilled or rotisserie style chickens. This recipe makes enough rub to coat 2 whole chickens.

Ingredients:
- 2 Whole Young Chickens (3-4 pound each)
- 2 yellow onions (quartered)
Rotisserie Chicken Rub
- 2 Tbl kosher salt
- 1 Tbl brown sugar
- 2 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon white pepper
- 1/2 teaspoon cayenne
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Procedure:
- Rinse chickens and pat dry.
- Whisk all rub ingredients in mixing bowl.
- Rub each chicken inside and out with rub mixture.
- Place a quartered onion inside each chicken.
- Wrap each chicken with plastic & refrigerate for 4 hours or overnight.
- Skewer and cook chicken(s) on rotisserie grill for 1 hour.
- Refer to your manufacturer’s grill or rotisserie User Guide for accurate cooking time recommendations.
- Let stand 10 minutes before carving.
