A Little Personal History:

This dish is great for breakfast, brunch, or re-heated as a late night snack.

Equipment: Measuring cups and spoons, medium skillet, cutting board and knifes, 1 small bowl, 1 medium bowl, 1 large bowl, whisk, spatula, 8×8 baking dish
Difficulty: Easy

Ingredients:

  • 1 pounds sausage
  • ½ cup chopped green, red and/or yellow bell peppers
  • Pinch of pepper
  • 6 eggs
  • 1½ cups milk
  • 4 cups cubed stale bread
  • 4 ounces shredded cheddar cheese
  • cooking spray or butter

Procedure:

  1. Over medium-high heat, brown sausage and peppers in medium skillet and sprinkle with pepper. Drain off excess fat. Set aside in small bowl, let sausage cool.
  2. While sausage browns, grate cheese and set aside in medium bowl.
  3. Cut bread into bite sized cubes. Set aside bowl with cheese.
  4. Spray baking dish with cooking spray or grease with butter. Set aside.
  5. In large bowl, whisk together eggs and milk.
  6. With spatula, fold in cubes of stale bread, cheese, and cooled sausage.
  7. Pour into coated baking dish. Smooth with spatula.
  8. Refrigerate for at least an hour.
  9. Preheat oven to 325°F.
  10. Bake for 1 hour.
  11. Allow to set for 5-10 minutes, cut into squares and serve.

Advanced Preparation:

  • Steps 1 – 3 can be done in advance, covered and refrigerated.
  • Steps 1 – 8 can can be done in advance and refrigerated or frozen till ready to bake. If frozen, return to refrigerator temperature before baking.

Tips, Notes, and Variations:

  • Left-overs can be refrigerated and re-heated in either a toaster oven or microwave.
