Tex-Mex Banana’s Foster

A Little Personal History:

I’ve always loved a good banana’s foster. Here’s my south of the boarder twist on a great desert.

Equipment: Measuring cups and spoons, 1 small bowl, 1 medium bowl, 1 large skillet, 1 wooden spoon, fork,
Difficulty: Easy

Ingredients:

  • 2 egg whites
  • 2 Tbs water
  • 2 Tbs rum, spiced
  • 3 firm bananas, sliced
  • ½ cup brown sugar
  • 2 – 10 inch flour tortillas
  • 1 cup Canola oil

Procedure:

  1. Whisk egg whites and water in small bowl for egg wash. Set aside.
  2. Add spiced rum to small bowl and set aside (see notes).
  3. Slice bananas and add brown sugar to medium bowl. Set aside.
  4. In a large skillet over medium heat, melt butter .
  5. Add bananas and sugar, sauteing with wooden spoon until sugar is dissolved.
  6. Remove from heat, pour in rum, return to heat and saute for 2 minutes.
  7. Spoon half the banana mixture onto one half of each flour tortilla, smooth out with spoon and fold tortilla over itself to make a half moon.
  8. Moisten edges with water and use fork to crimp edges together.
  9. Brush edges with egg wash and refrigerate for 1 hour.
  10. Brush tortillas with oil.
  11. In a large skillet, heat remaining oil over medium-high heat. Fry stuffed tortillas until golden brown on both sides. 4-5 minutes each side.
  12. Transfer to serving platter or warming plate. Pat of excess oil with paper towels, slice each tortilla in ½ to make quesadilla wedges.
  13. Serve warm with side dishes of powdered sugar, whipped cream, fruit composé, and ice cream.

Advanced Preparation:

  • Steps 1 – 9 can be done in advance and refrigerated up to a couple days before cooking. They can also be frozen, returned to room temperature before cooking.

Tips, Notes, and Variations:

  • If you don’t have spiced rum (i.e. Captain Morgan’s), you can make your own using one of Holiday Mulled Spices Bags.
  • This dish can also be grilled. Set grill to high and place tortillas on greased cookie sheet or aluminum foil on top of grill slats.
