A Little Personal History:
The secret to a great Thanksgiving Turkey is a great Turkey Pan Gravy and that happens best with your own turkey stock 🙂

Equipment: | chopping knife & board, 1 large cooking pot |

Ingredients:
- 3 cups chicken stock
- 1 cup white wine
- Turkey neck & giblets (no liver)
- 2 carrots – sliced
- 1 onion- cut in quarters
- 1 Celery – sliced
- 4 cloves garlic, smashed
- 1 tablespoon soy sauce (optional)
Procedure:
- Combine all ingredients in a pot, cover and simmer for two to three hours.
- Strain and discard the solids
- Refrigerate overnight, remove any fat that has risen to top. Store until needed.
Advanced Preparation:
- Everything can be done weeks in advance and even frozen and thawed when needed.
