A Little Personal History:

While I prefer my classic tomato sauce, there are times, I just don’t have the time to make it. This version, while using store bought canned product, is faster to prepare, and tastes great. To keep with the Club of Five cooking manifesto (aka organic, non chemical), I hope you buy product that supports this manifesto.

Equipment: Can opener, cutting board and sharp knife, measuring cups and spoons, garlic press, large cooking pot, wooden spoon, glass jar(s) and top(s)
Difficulty: Easy

Ingredients:

  • 2 – 32 ounce canned tomato sauce
  • 2 – 16 ounce canned whole seeded tomatoes, chopped
  • ½ cup fresh parsley (minced)
  • 2 teaspoon fresh oregano (minced)
  • 2 teaspoon fresh thyme (minced)
  • 1 teaspoon. fresh basil (minced)
  • 4 garlic cloves, pressed
  • 2 Tbs. brown sugar
  • 1 cup white wine
  • 2 Tbs. Worcestershire sauce
  • 3 bay leaves

Procedure:

  1. In large pot, add tomato sauce
  2. On cutting board, chop whole, seeded tomatoes, add to pot.
  3. Mince all herbs, press garlic, measure sugar and add to pot.
  4. Over medium high heat, blend everything in uncovered pot together and bring to boil.
  5. Reduce to low, and simmer uncovered for 30 minutes, stirring occasionally with wooden spoon.
  6. Add white wine, Worcestershire sauce and bay leaves, and bring back to boil over medium high heat. Reduce heat to low and, stirring occasionally, cook for 10 minutes or until sauce thickens to desired consistency.
  7. Remove bay leaves and transfer to glass jar(s). Tightly seal and refrigerate till needed.

Advanced Preparation:

  • Everything can be prepared in advance and refrigerated till needed.

Tips, Notes, and Variations:

  • If it doesn’t thicken to your liking and your short on time, stir in 3-4 Tbs. of tomato paste.
