I love a good chili sauce with egg rolls, and many other thai appetizers for dipping. And here’s may favorite chili sauce recipe.

Ingredients:
- 8 quarts tomatoes (approximately 13.25 pounds)
- 9 green peppers
- 6 med. size onions
- 3 cups sugar
- 3/4 cup salt
- 1 doz. med. red peppers
- 3 teaspoon. cloves, ground
- 3 teaspoon. Cinnamon
- 2 teaspoon. Nutmeg
- 2 teaspoon. Ginger
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 tablespoon oregano
- 1 quart vinegar
Procedure:
- Blanch tomatoes, (remove skins).
- Chop all vegetables in pieces, add spices/seasonings and blend in Cuisinart (do in batches if necessary).
- Transfer to large pot, add vinegar, stir and bring to a boil. Reduce heat to simmer for 3 to 4 hours until thickened and cooked thoroughly. Check and stir every 30 – 45 minutes till done.
- Tightly seal in sterilized cans or jars. Store, refrigerate or freeze till needed.
