Sausage Egg Breakfast Squares

Equipment: | Measuring cups and spoons, medium skillet, cutting board and knifes, 1 small bowl, 1 medium bowl, 1 large bowl, whisk, spatula, 8×8 baking dish |

Ingredients:
- 1 pounds sausage
- ½ cup chopped green, red and/or yellow bell peppers
- Pinch of pepper
- 6 eggs
- 1½ cups milk
- 4 cups cubed stale bread
- 4 ounces shredded cheddar cheese
- cooking spray or butter
Procedure:
- Over medium-high heat, brown sausage and peppers in medium skillet and sprinkle with pepper. Drain off excess fat. Set aside in small bowl, let sausage cool.
- While sausage browns, grate cheese and set aside in medium bowl.
- Cut bread into bite sized cubes. Set aside bowl with cheese.
- Spray baking dish with cooking spray or grease with butter. Set aside.
- In large bowl, whisk together eggs and milk.
- With spatula, fold in cubes of stale bread, cheese, and cooled sausage.
- Pour into coated baking dish. Smooth with spatula.
- Refrigerate for at least an hour.
- Preheat oven to 325°F.
- Bake for 1 hour.
- Allow to set for 5-10 minutes, cut into squares and serve.
Advanced Preparation:
- Steps 1 – 3 can be done in advance, covered and refrigerated.
- Steps 1 – 8 can can be done in advance and refrigerated or frozen till ready to bake. If frozen, return to refrigerator temperature before baking.
Tips, Notes, and Variations:
- Left-overs can be refrigerated and re-heated in either a toaster oven or microwave.
